Quick Easy Healthy Fruit Tart
With a crust made from Biscoff Cookies and granola, a creamy Greek yogurt and mascarpone filling, and a vibrant assortment of fresh berries on top, this tart is a perfect balance of flavors, textures, and healthiness.

Ingredients
Crust:

cup
(100g-13 cookies) Biscoff cookies
1
cup
(113g) no sugar added granola

Tablespoons
(70.6g) plain Greek yogurt
Filling:
3
cups
(750g) plain Greek yogurt
8
ounces
(226g) mascarpone cheese
(or softened cream cheese)

teaspoons
Cornaby’s EZ Gel
2-3
Tablespoons
honey
according to taste
Fruit Topping:
6
ounces
fresh strawberries
6
ounces
fresh raspberries
6
ounces
fresh blackberries or blueberries
Instructions
Crust:
Preheat oven to 350°F.
Using a food processor, crush Biscoff cookies and granola until well mixed and fine grained. Add yogurt and mix until combined.
Press into bottom and sides of tart or pie pan. Bake at 350°F for 10 minutes. Cool.
Filling:
In medium bowl, mix yogurt and mascarpone cheese together until smooth.
Add honey and EZ Gel. Mix until incorporated.
Add filling to cooled crust and smooth top. Place in refrigerator for 15 minutes.
Fruit Topping:
Wash fruit and dry thoroughly. Slice strawberries, if desired.
Within two hours of serving, create pleasing arrangement of fruit on top of filling. Refrigerate fruit tart until ready to serve.
